Quinoa is undoubtedly a true superfood. Originating in Bolivia and Peru, quinoa is often called “the golden grain of the Incas”, and is actually not a true grain, as it’s not a member of the grass family, but a pseudocereal closely related to amaranth. What’s awesome about quinoa is that it’s very high in protein, low in sugar and totally gluten free! So all you anti-gluten people grab a bag of quinoa and get cookin! Here’s a great “risotto” recipe to get you going.
Ingredients:
6 spoonfuls olive oil
1 onion, finely chopped
1 red pepper, finely chopped
1 cup quinoa
½ cup white wine
salt & pepper
½ cup grated Parmesan cheese
¼ bunch parsley, finely chopped
Directions
Rinse the quinoa and set aside to dry. Sauté the onion & the red pepper in a non-stick pan using half of the olive oil. Add the quinoa and mix thoroughly. Pour in the wine. When the alcohol has fully steamed off add about 3 cups of water and lower the heat. When the quinoa is fully cooked add the salt & pepper, the rest of the oil and the cheese. Mix and remove immediately from the heat. Sprinkle with parsley and serve.
