Roast the pine nuts in a pan. Take them out and keep them aside. Pour the olive oil into the pan and saute the onion. Add the minced meat. Stir to remove large lumps from the minced meat and cook until white and cooked through. Add the curry, salt and pepper. Stir to combine the flavors and to evaporate all the liquid from the minced meat. Remove from the heat and add the roasted pine nuts and fresh thyme leaves. Let the minced meat cool.
Open the crust sheets and cut them vertically into 4 strips of approximately 6 cm. Brush with melted butter and add 1 spoonful of the filling. Roll into a triangle and place in a baking tray lined with non-stick greaseproof paper. Brush the surface with the melted butter. Repeat the process until you’ve used all the stuffing. Bake in a preheated oven at 200°C for 10-12 minutes.
