Tacos with spicy prawns

Ingredients

For the tacos
6 small tortillas
Sunflower oil, for frying
300g prawns, Νο 13-15, peeled and deveined
1 tsp granulated sugar
1 tsp salt
1/2 tsp paprika
1 tsp cumin
1/4 tsp oregano
1/4 tsp dried chili 
1 clove of garlic
2 tbsps. coriander leaves 
2 tbsps. olive oil

For the sauce
1 avocado
1/3 spring onion
Zest of 1 lime
2 tbsps strained yoghurt 0%
Juice from 1 lime
2-3 drops of tabasco sauce 
2 tbsps olive oil
Salt
Pepper

Method
For the tacos
Warm up sunflower oil in a pan. 
Add tortillas and place another pan on top for resistance. This will ensure that tortillas will remain flat.
Strain fried tortillas on a parchment paper.
 
For the sauce
Cut avocado in small cubes and add it in the blender.
Finely chop spring onion and add to blender.
Add yoghurt, tabasco, olive oil, juice and zest of a lime, finely chopped coriander, salt and pepper.
Blend, adding slowly cold water until you have a smooth and shiny sauce.
 
For the shrimps
Place a pan on high heat.
Chop shrimps and place in a bowl. Add sugar, salt, paprika, cumin, oregano, dried chili and garlic. Add 2 tablespoons of olive oil and stir with a spoon.
Sauté shrimps on high heat for about 1 minute.
