Veal steaks with chimichurri sauce

Ingredients
For the steaks

600g veal steaks, boneless

2 cloves of garlic

10g thyme, chopped

10g rosemary, chopped

Salt

Pepper

 
For the baby potatoes
200g baby potatoes 
10g thyme
60g butter, unsalted
10g chives 
Salt
Pepper
 
For the chimichurri sauce 
100 ml olive oil
30 ml lemon juice 
30 ml white balsamic vinegar 
100g parsley
30g coriander
10g oregano, dried 
1 chili, finely chopped
1 clove of garlic
Zest from 1 lime
Salt
Pepper
Method
For the steaks
1. Prepare the coal in the BBQ. We want high heat.
2. Add salt on steaks and place in the BBQ.
3. Grill from both sides, 4-5 minutes, until they are medium-cooked
 
For the baby potatoes
1. Boil the baby potatoes for 15’. Let them cool off and then roast them on high heat on the BBQ to get a nice colour. Aromatize them with chopped thyme, butter, chives, salt and pepper.
 
For the chimichurri sauce
1. Add all ingredients for the sauce in a measuring jug and blend with a hand blender.
