Spicy Nuts: Some Like Them Hot!

For the next month we will be graced with the EURO UEFA 2016 and without a doubt, friends will be gathered in front of the TV to watch all the football matches in store. And how better to enjoy the excitement than with beer and one (in not all three) of these spicy nut combos! 
 

Mixed Nuts with Cinnamon and Cumin

 
Ingredients: (Makes 4 cups)
 
½ tsp ground cumin
 
½ tsp Cayenne pepper
 
½ tsp ground cinnamon
 
4 cups mixed nuts (walnuts, pecans, hazelnuts, almonds)
 
4 tbsps. unsalted butter
 
6 tbsps. brown sugar
 
1 tsp salt
 
Mixed spices
 
Method:
 
Add your mixed nuts to a hot pan and toast them for about 4 minutes (stirring frequently). Add the butter and continue stirring until the nuts take on a darker colour (approximately 1-2 minutes). Add the sugar, salt, all the spices and 1 tbsp. water and continue cooking (all the while stirring) until the sauce thickens and forms a glaze coating over the nuts. This should take about 5 minutes.
 
Remove the pan from the heat and throw the nuts onto a baking tray that’s been lined with foil, separate the nuts with a fork and let them cool until the sugar hardens (around 10 minutes). And serve! Delicious!
 
These nuts should be stored in an airtight container.
 

Cashew Nuts with Rosemary

 
Ingredients: 
 
½ kilo of cashew nuts
 
2 tbsps. fresh rosemary, chopped
 
½ tsp cayenne pepper
 
½ tsp brown sugar
 
2 tsp salt
 
1 tbsp. melted butter
 
Method:
 
Preheat your oven to 190°C
 
Place the cashew nuts on a baking pan (without oil) and roast for about 10 minutes until warm. At the same time, in a large bowl, mix your rosemary, pepper, sugar, salt and butter.
 
Next, remove the cashew nuts from the oven and throw them into the bowl with your remaining mixed ingredients, combining them well so that the nuts become completely coated.  Serve warm! Scrumptious!
 

Mixed Nuts with Honey and Paprika

 
Ingredients: (Makes 4 cups)
 
1 ½ tbsp. honey
 
2 tablespoons olive oil
 
1 clove garlic, chopped
 
¼ tsp chili powder
 
1 tbsp. smoked paprika
 
1 tsp sea salt
 
1 cup almonds, unsalted
 
1 cup cashew nuts, unsalted
 
1 cup macadamia nuts, unsalted
 
1 cup Brazil nuts
 
Method:
 
Preheat oven to 180°C.  Line a baking tray with a sheet of baking paper.
 
Over a low heat, stir your honey, olive oil, garlic, chili powder, paprika and sea salt until the honey melts and the ingredients are well combined.  Pour the mix into a large bowl and add the nut, stirring until everything is well combined.
 
Pour your nut mixture onto your baking tray, making sure it’s spread out evenly, and bake in the oven for about 15 minutes (turning intermittently).
 
Remove from the oven and let everything cool completely before serving. So yum!!
