Salad with watermelon, feta and dressing mustard seeds

Ingredients

4 cups (600g) seedless watermelon, cut in cubes or balls (see note) 
2 cups wild rocket leaves  
1 pack (200g) feta cheese cut in cubes 
2 tbsp olive oil 
2 tbsp mustard seeds 
2 tbsp honey 
1/3 cup white balsamic vinegar 
1 tsp salt 

 

Method

Prepare the dressing: In a bowl, add the olive oil, mustard seeds and stir. Add the honey, white balsamic vinegar, stir and add salt. Stir well until the salt is dissolved and set it aside. 
In a nice glass dish, add the wild rocket, watermelon, feta and pour the dressing on top. 
 
Note: To create balls out of the watermelon, use the special spherical knife for melons. If you don’t have that, use a small ice cream scoop. 
Also, we can replace feta with halloumi, after we grill it.
