A gourmet dish for the vegetarian palate, which combines 3 of the most compatible Mediterranean ingredients: figs, cheese and nuts!
Ingredients:
300g haloumi cheese, sliced
8 fresh figs
50g pecans, chopped into large pieces
For the Dressing:
4 tbsp olive oil
1 tbsp lemon juice
freshly ground pepper
For Serving:
2 bunches arugula, chopped into large pieces
Directions:
In a well-heated pan brown the haloumi slices on both sides. Cover and set aside to stay warm. Cut the figs in half lengthwise, drizzle with olive oil and lightly sauté them in the hot pan.
For the Dressing:
In a cup, or better yet, in a container with a spill proof lid, add all the ingredients for the dressing and shake well.
For Serving:
Lay a bed of arugula on the plate and place the cheese and figs on top. Sprinkle on the pecans and then drizzle on the dressing.
