Quinoa salad with Feta Cheese & Avocado

Ingredients
500g quinoa
840 ml water
100g feta cheese
Juice from 3 lemons
1 avocado
Oregano
½ bunch of parsley, finely chopped
2 carrots, grated
Fresh mint leaves
Parsley leaves
60g cherry tomatoes
40 ml olive oil
1 tsp dried oregano
Salt
Pepper
Method
1. Add quinoa in a pot with water. Once boiled, cover with foil.
2. Add boiled quinoa in a bowl, along with grated carrot, finely chopped parsley, avocado, oregano, cherry tomatoes, salt, pepper, lemon juice and olive oil.
3. Stir well and add salt and pepper accordingly.
4. Garnish with crumbled feta cheese, fresh parsley leaves and mint leaves.
