In a bowl, mix all marinade ingredients. Place the pork chops in the marinade, ensuring they are well-coated, and marinate for at least 2 hours or preferably overnight. Drain the pork chops before cooking.
Heat 2 tablespoons of olive oil in a pan and sear the pork chops on both sides until they are nicely browned.
Transfer the pork chops to a baking dish, pour the marinade over them, and cover with parchment paper and aluminum foil.
Bake in a preheated oven at 180°C (350°F) for 2 hours. Uncover and continue baking for an additional 30 minutes, or until the pork chops are golden brown.
