Ingredients
  • 4 eggs
  • ½ cup (115ml) sunflower oil
  • ½ cup (125ml) milk
  • ½ cup (125ml) slightly concentrated tomato juice
  • 2 cups (300g) Farina "00" flour
  • 2 teaspoons (16g) baking powder
  • 1 teaspoon dried oregano
  • ½ cup (80g) black olives, chopped
  • 8 square slices of ham (approximately 140g), cut into squares
  • 8 slices of pepperoni salami (approximately 50g), cut into small pieces
Method

In a bowl, beat the eggs well, then add the sunflower oil, milk, and tomato juice. Mix until well combined. Add the flour, baking powder, oregano, chopped olives, ham, and pepperoni to the mixture, and mix thoroughly.
Place paper liners into a 12-cup muffin tin. Using an ice cream scoop, divide the mixture evenly among the muffin cups. Typically, 2 scoops of batter per cup works well.
Bake the muffins in a preheated oven at 180°C (356°F) for 20 minutes, or until the muffins are golden and a toothpick inserted into the center comes out clean.
Let the muffins cool slightly before serving. Enjoy your pizza muffins warm or at room temperature.
