Olive pie with semolina

Ingredients

4 cups (600g) Farina flour
1 cup (180g) semolina
1 cup (230ml) seed oil
1½ cup (375ml) fresh orange juice
1 tin (330ml) carbonated soda
2 cups (350g) chopped olives without the pit
3 tsp (24g) baking powder
¾ cup (85g) fresh finely chopped onions
½ cup (20g) fresh finely chopped mint
1½ cups (75g) fresh finely chopped coriander
1 tsp dried mint
For the coating
2 tsp (20g) sesame seeds

 

Method

Preheat the oven at 180°C. In a bowl, put all the ingredients for the olive pie and mix well. In a pan of 22x23cm add some seed oil and with a brush, spread it on the base and edges of the pan. Add the olive pie mix in the pan and flatten it with a spoon. Sprinkle with the sesame seeds and cook in the preheated oven for 55 minutes or until the olive pie becomes golden-brown
