If Jimmy Buffet was from Cyprus, this would be his burger!
Ingredients: (serves 2)
for the burger:
250g ground lamb meat or a mix of 75% lamb and 25% beef
1 small onion, finely chopped
2 tbsp parsley, finely chopped
salt & pepper
for the sauce:
3 tbsp mayonnaise
½ tsp cumin
a few drops lemon juice
other ingredients:
2 hamburger buns
2 thick slices of feta
2 thick slices of red onion
a little bit of arugula (optional)
Directions:
Start by mixing the ground meat with the onion, parsley and salt & pepper in a big bowl. Shape the meat into two patties. Cover them with plastic wrap and let them sit in the fridge harden up a bit.
In a small bowl mix the mayo with the cumin adding the lemon juice to loosen up the mixture a bit.
When you’re ready to cook them, unwrap your patties, drizzle olive oil on them and grill them on an outdoor barbeque or even on an indoor kitchen grill. Be sure to use medium temperature to maintain their moisture. When your burgers are almost ready, toast your hamburger buns.
When the meat is cooked and the bread toasted, build your burgers by putting the patty on the bottom bun, spreading your sauce on the meat and then adding the arugula, the onion and then the feta. Close your burger with the top piece of the bun and enjoy with fries and a cold beer! Talk about, ‘a cheese burger in paradise’!
