How to make a healthy and easy salad with quinoa and feta!

Quinoa, the ultimate super food, has come to stay for good into our lives. What is particularly satisfying and beneficial about this super food is its rich amounts of protein, amino acids, vitamin B, iron, and its many antioxidants. So, let’s make this as a base is our choice of simple, delicious salads.

 

Ingredients (for 4 people)

1 cup of water

½ cup of quinoa

2 fresh cucumbers

2 fresh tomatoes

150 grams of feta, cut up into small pieces

Olive oil, lemon, salt

Olives (optional)

 

Directions

First, prepare the quinoa. In a saucepan, add the water with the quinoa and boil over medium heat. Once it reaches a boil, reduce heat and allow it to simmer until the quinoa is tender and has absorbed the water, do this for about 15-20 minutes. Simultaneously wash and chop the tomatoes and cucumber. In a large bowl, mix all the vegetables, the quinoa, feta cheese, and drizzle with olive oil and lemon. Put as much as much salt as you would like, and if you would like, you can also add olives!
