On the 9th of May, the Russians celebrate Victory Day. On that day Russia won over fascist Germans during 1941-45. To celebrate with them, we offer you an authentic Russian recipe. Kasha is the backbone of the Russian cuisine. A hearty dish with buckwheat as its main ingredient.
Ingredients (6-8 servings)
50 gr. canned mushrooms
1 onion, finely diced
3 tbsps. butter
1 1/2 cups buckwheat
2 3/4 cups boiling water
100 gr. Gouda grated
Salt
Method
On a skillet over medium heat, roast the buckwheat until it's a golden-brown color. Remove buckwheat and place a tablespoon of butter, add the diced onions, and keep it on a medium heat for 5-8 minutes until onions are seared and golden-brown. Meanwhile, drain, rinse and chop the mushrooms.
Add the rest of the butter, mushrooms and buckwheat in the pot. Roast for 2-4 min, until the buckwheat aroma starts emanating from the pot. Pour in the boiling water, bring to a boil, season with salt, reduce the heat to low and cook for about 30 min, until the buckwheat has cooked through.
Serve on the plate and add grated Gouda cheese. Add a dash of finely chopped parsley as garnish.
