For the Chicken and Vegetables:
- 2 chicken fillets (approximately 500g)
- 4 tablespoons olive oil
- Juice of 1 lime
- 3 colorful sweet peppers (red, orange, green), thinly sliced

- 1 teaspoon garlic powder
- 1 teaspoon onion powder

For Serving:
- 8 medium tortillas
- 200g sour cream
- Guacamole (recipe below)
- 2 cups grated red cheddar cheese (Red Leicester)
For the Guacamole:
- 2 ripe avocados (approximately 500g), diced
- 1 medium red onion, finely chopped
- 1 medium tomato, seeds removed and chopped
- Juice of 1 lime
- 1/3 cup chopped fresh coriander
- 1 hot pepper, chopped (optional)
- 1 teaspoon salt
