Cheesecake Pancakes

Ingredients

135g all-purpose flour
1 tbsp baking powder 
1 pinch of salt
2 tbsps sugar
1 tbsp vanilla extract 
130 ml milk 3,5 % fat
1 egg
40g butter  
200g mixed berries 
100g sugar 
1 piece star anise 
1 sachet vanilla powder 
Strawberries, raspberries, blueberries, hazelnuts 

For the frosting
150g unsalted butter
225g cheese cream
10 ml vanilla extract
1 lime (zest)
500g caster sugar

Method

1) Add flour, baking powder, salt, sugar in a bowl and make a hole in the middle.
2) Melt butter in a saucepan and add milk until warmed up.
3) Add butter and milk in the bowl with the solid ingredients, stir well until smooth and finally add the egg.
4) Add mixed berries, sugar, star anise, vanilla powder in a saucepan and boil on low heat for 10 minutes until you have a sauce.
5) Put some melted butter in a pan and spread it with a brush.
6) Start making the pancakes on high heat and then lower on medium. Repeat.
7) Add butter and caster sugar in a mixer and beat well until fluffy. Add cheese cream, vanilla extract, and lime zest.
8) Garnish your pancakes with fresh fruit and the berries sauce.
