Ingredients
For the mousse:
750 ml heavy cream 38% fat
250 g strained yogurt  
250 g icing sugar
2 tbsps vanilla essence
Zest of a lime
 
For garnish:
180 g crushed digestive biscuits
60 g melted butter
Strawberries
Blueberries 
Method

1. In a mixer's bowl, beat the heavy cream with the icing sugar until it becomes a light whipped cream and then add the vanilla extract, the lime zest and the yogurt and beat until it becomes a light mousse.
2. In a bowl add the crushed digestive cookies and the melted butter and mix well with a spoon.
3. In small glass bowls, lay the cookies on the base and spread the mousse on top. 
4. Garnish with the fruit, with lime zest and leaves of fresh mint. 
5. Place in the refrigerator for 1 hour and serve.
