An awesome Christmas side dish that will be discussed at the table!
What we will need: (for 8 servings)
25g. butter
2 red onions
700 g. Brussels sprouts (preferably small)
1 tbsp. brown sugar
2 tsp sherry vinegar
Method:
In a heavy-bottomed nonstick pan, melt your butter and then add your onion (cut into slices). Allow the onions to caramelize over medium heat for approximately 6 – 8 minutes, stirring frequently with a wooden spoon so that they cook evenly. Once they take on a golden color, they are ready.
Put your pan to the side while you prepare your Brussel sprouts.
Boil the sprouts in a pot of salted water for about 3 – 4 minutes, until tender. Pierce with a fork to check that they’re ready.
Go back to your caramelized onions and add your sugar and sherry vinegar to the pan. Bring to the boil on a low heat to give the flavors a chance to blend and become enhanced. As soon as the liquid starts bubbling, remove the pan from the heat.
You can now place the cooked Brussel sprouts in a bowl and stir in your caramelized onions, or – for an even sweeter flavor – throw your Brussel sprouts into the pan with the caramelized onions and glaze them slightly over a low heat and then place in a serving bowl or platter.
