Mexican tortillas drenched in melted cheese followed by an ice-cold beer…. Few things in life are as satisfying!
Ingredients:
For the guac:
2-3 ripe avocados
4-5 ripe tomatoes
2 hot chilies
1 handful freshly chopped onion
1 handful freshly chopped cilantro
coarse salt
black pepper
lime juice (or lemon)
For the quesadillas:
2 handfuls grated cheddar cheese
a little freshly chopped onion
2 handfuls freshly chopped cilantro
1 red freshly chopped pepper
a little spicy pepper (red or green), finely chopped
tortillas
For the garnish:
Sour cream (or strained Greek yogurt)
Directions:
Throw the peeled and pitted avocados, 2-3 tomatoes (seedless if possible), the chilies, onion and cilantro into a blender. Blend until unified. Add the remaining tomatoes and another avocado if you have it, along with the salt, and blend again. Dump the mixture into a bowl, sprinkle on the salt, pepper (ideally freshly ground), and the lime or lemon juice.
For the quesadillas, simply throw all the ingredients, finely chopped, into a bowl and mix vigorously. Lay a tortilla flat and cover the surface of it with the ingredients. Place a second tortilla on top and press it flat. Warm the full tortillas in a dry non-stick pan without butter or oil for roughly 1 ½ minutes on either side. Remove from pan and cut tortillas in fourths like a pizza. Serve with two heaping spoonfuls of sour cream or yogurt and crack open a beer!
TIP: Fill up additional tortillas with the leftover filling, cover with top tortilla and save for another meal. This recipe makes enough for a second meal.
