Salad with chickpeas, sweet potato & bacon

Ingredients

250 g boiled chickpeas
100 g sweet potatoes
2 tbsp parsley finely chopped
60 g mixed salad
30 g rocket
1 grated carrot
50 g celery
Juice of an orange
Fillets of an orange
1 onion 
3 slices of bacon
1 sq. garlic
Zest of a lime
40 g yogurt
1 tsp cumin
2-3 tbsps olive oil
salt
pepper
parsley
1 pomegranate
60 ml of red wine

Method

1. Heat a pan and sauté bacon, the grated sweet potato, the celery, the chopped onion and the garlic and then add the boiled chickpeas. Pour red wine.
2. Then add the orange juice. Season with salt and pepper and at the end add the chopped parsley, yogurt, cumin and mix.
3. In a bowl add the mixed salad and the rocket, the pomegranate and the orange fillets, olive oil, salt, pepper.
4. Serve on a plate the mixture of chickpeas and garnish with the salad leaves.
