Out of this World Chicken and Rice Fajitas

Now that the hot weather has really set it, bring the sizzlingly exotic spices of Mexico to your table tonight, with this fun and easy recipe! This simple dish can turn your every day chicken night into a regular fiesta del fuego right in your own kitchen, with the tantalizing tingle of paprika and the brilliant brightness of multicolored bell peppers. Your taste buds will sing like mariachis as you enjoy this heavenly recipe from south of the border! 
 
Ingredients:
 
2 chicken breasts
1 packet soft tortillas
1 red, 1 yellow and 1 orange bell pepper, thinly sliced
1 large onion, finely chopped
3 tbsp olive oil
1 cup chopped tomato
3 tsp sweet paprika
1 tsp spicy paprika
2 pinches oregano
salt
a little pepper
 
For the Side:
 
1 cup strained yogurt or sour cream
long grained rice
guacamole
 
Directions:
 
Sautee the chicken and the onion in the olive oil, and as soon as they are golden, add the peppers. 
 
Let cook a bit until the liquid is gone and then add the paprika, tomatoes, salt and pepper. Cover and slowly boil for 15 minutes.
 
Next, add the oregano and turn up the heat. Cook until all the liquid is gone. 
 
Serve wrapped up in the tortillas with the rice, sour cream or yogurt, and guacamole.
