Serving size 4
Ingredients
4 Glass dessert bowls
250 gr. fresh strawberries
1 pack of your favourite plain biscuits (e.g. Digestive-type)
2 tablespoons of melted butter
1 tablespoon of sugar
250 gr. light cream cheese
6 tablespoons powdered sugar
1/3 teaspoon of vanilla extract
½ cup of yogurt
Directions
1. Create the Crust
Crush the biscuits until they are in many tiny bits. Then, mix with the sugar and butter until pasty. Spread the mixture evenly throughout the bottom of each bowl. Press lightly to the bottom of each bowl so that it sticks. This should cover 1/3 of your glass.
2. Create the Cheesecake
In a medium sized bowl, using a hand blender, mix the cream cheese and powdered sugar together until the mixture is light and creamy. Next, add the vanilla extract and yogurt. Mix all together until fluffy.
Next, scoop an equal amount of Cheesecake filling into each bowl, leaving about 1/3 of a space empty at the top for the strawberries to fit. (Tip: You can also add a layer of strawberries on top of the crust before adding the cheesecake filling, and then after adding the filling, adding the strawberries once again on top- your choice!)
3. For the topping
After washing your batch of strawberries, cut them into slices. Mix the strawberries with a tablespoon of sugar and allow it to sit for about 10 minutes or until the mixture sets and becomes syrupy. Then, equally distribute the strawberries at the top of each bowl, and refrigerate until ready to serve! Sounds lovely, doesn’t it?
