An inexpensive yet delicious recipe perfect for fasting.
Ingredients:
1 package of louvana (yellow split peas)
olive oil
salt & pepper
cumin
2 onions, finely chopped
lemon juice (to taste)
To Go With:
black olives
fresh baked village bread or ciabatta
Directions:
Rinse the split peas in a strainer, then boil for 15 minutes skimming off the foam that accumulates on the surface of the water with a large spoon. After 15 minutes are up, pour in a healthy dose of olive oil to taste along with all the spices. The cumin will give your soup a unique flavor. Pass the soup through a food processor to make is sooth, or if you’re looking for a more rustic vibe, just mash it to the best of your ability by hand. Next, sauté the onions until they are caramelized, and then drop them into the soup. Squeeze in lemon juice to taste and serve with black olives and fresh baked bread.
