Ingredients:
1 kg lamb meat, diced in portions
200 gr. Greek cheese “Kefalotiri”
2 large onions
3 large potatoes
3 colored peppers
3 cloves garlic
1tsp dried oregano
2 tsp mustard
½ cup olive oil
½-1 cup white dry wine
Salt, pepper
We will need baking paper or roasting bagand string to tie
Instructions:
Place the lamb in a big bowl. Dice the cheese into large cubes. Peel the onions and potatoes and chop them along with peppers and garlic. Add everything into the bowl with the lamb. Add also the oregano, mustard, oil and wine. Finally, add salt and pepper and mix everything together. Cover the bowl with aluminum foil or cling film and leave in fridge for a few hours to marinade. Cut the baking paper into two long strips. Lay them down in a cross and place ingredients into the centre. Fold into an envelope and tie using the string. Alternatively, use a roasting bag. Bake in a preheated oven at 180ºC for 75 minutes.
