Ingredients (4 servings)
3 cups water
4 tea bags (such as black tea)
8 whole cloves
2 cups low-fat milk (can be omitted)
4 cm piece fresh ginger, unpeeled, halved lengthwise
1 cinnamon stick, plus 4 for garnish
1/4 teaspoon whole black peppercorns
1/4 cup honey (or to taste)
4 caramelised orange slices for garnish
Method
In a large saucepan, bring water and fresh ginger to a boil. Reduce heat and let it for simmer 8 minutes. Add the tea bags, 1 cinnamon stick, the whole cloves, the whole black peppercorns and low-fat milk. Steep over medium-low heat until the tea is fragrant, about 6 minutes.
Strain through a sieve and discard all the solids. Stir in the tea, the honey. Divide among mugs. Serve your Christmas Tea hot and garnish with 1 cinnamon sticks and a whole slice of caramelised orange ( or half, if the slice is big).
