Awesome Ice-Cream Sandwiches for Kids!

Summer is finally here and ice creams are having their field day! So why not take advantage of the wide variety of ice cream that abounds and together with your kids, try making some of these incredibly delicious ice-cream sandwiches with your kids!
 
Chocolate Chip Cookie & Vanilla Ice-Cream Sandwiches

Who doesn’t love these American-style cookies! And in combination with vanilla ice cream, this is a sandwich that dreams are made of!
 
Ingredients: (for 12 sandwiches/23 cookies)

 280 g. brown sugar
225 g. crystal Sugar
250 g. butter
2 large eggs
1 tbsp. vanilla extract
450 g. flour (all-purpose)
2 tsp baking powder
300 g. milk chocolate (chopped into chunks)
1 family package vanilla ice cream
 
Method:

To make the biscuits, mix the sugar and butter in a large bowl with a large electric hand mixer and beat until the mixtures turns smooth, creamy and somewhat paler in colour.
 
Then, add your eggs, one by one, stirring well. Add the vanilla extract. Next, sieve the flour and baking powder into the mix and stir with a wooden spoon until properly combined and it forms a dough.   Then, stir in your chocolate pieces. 
 
Using your hands, mold the dough well and then divide into two parts. Roll each part in transparent cling film until they take on a sausage shape. Seal the film at each end of the pieces and place them in the refrigerator to chill for a minimum of three hours or overnight. You could even freeze the dough if you wish to use it at another time altogether.
 
Next, preheat your oven to 180° C. Remove the two rolls from the refrigerator, remove the cling film and using a small sharp knife, cut each into 12 equal slices (24 slices in total).  Place the slices on parchment paper on a baking tray and bake for 20 minutes or until cookies have turned golden brown around the edges.  Then, remove from the oven and allow to cool.  
 
Once cooled, take one cookie slice, place a dollop of ice-cream, and then place another cookie on top, squeezing slightly and voila, your vanilla ice-cream sandwiches with chocolate chip cookies are ready! Yum!!
 
Chocolate Cookie & Strawberry Ice-cream Sandwiches 

For this recipe, we will make chocolate cookies to create a sandwich with strawberry ice cream! Chocolate and strawberry, an amazing combination!
 
Ingredients:

45 g. cocoa powder
285 g. flour (all-purpose)
1 tsp. baking powder
¼ tsp. salt
110 g. butter (room temperature)
140 g. brown sugar
2 eggs (room temperature)
1 tsp. vanilla extract
 

Method:

In a medium bowl, combine the cocoa, flour, baking powder and salt. Leave aside.
 
In another large bowl, use an electric mixer on medium speed to beat the butter and brown sugar for approximately 2-3 minutes, until fluffy. Then, reduce speed and add your eggs, one at a time, beating well after each addition. Next, add the vanilla extract.  
 
At this point, add your dry ingredients (cocoa, flour, baking powder and salt) and mix on low speed until a dough forms. Then place your dough into the refrigerator for at least 1 hour.
 
Preheat the oven to 175°C and spread baking paper on a baking sheet.
 
Sprinkle a little flour on a large surface and roll the dough into an oblong, about 0.5 cm thick. Using a round cookie cutter, about 3cm in diameter, cut out as many pieces from the dough as you can. Place in the oven and bake for 8-10 minutes.
 
Remove what are now your biscuits from the oven and let them cool completely.  Then, spread some strawberry ice cream on one of the biscuits as thickly as you’d like and place another biscuit on top! Your ice-cream sandwich with chocolate and strawberry is now ready! Decadent!

A Super Easy Ice-cream Sandwich!

Get your hands on your favorite chocolate biscuits and any ice-cream of choice! There’s a huge variety out there and METRO’s collection is sure to make you mouth water! 

Ingredients:

250 g. chocolate cookies (round, square or rectangular)
1 liter ice-cream (remove from freezer a couple of minutes before use to soften)
340 g. dark chocolate or milk chocolate, grated
Tip: In addition to the grated chocolate, improvise with colorful decorations like chocolate truffles or chopped nuts.
 
Method:

Place 15 cookies on a lined baking tray. On top of each place a scoop of ice-cream of your choice. Place another cookie on tope and press down slightly so that the ice-cream spreads across the entire surface of the cookie. Place in the freezer for about 1 hour, or until the ice-cream hardens.  Then roll your ice-cream sandwiches in your grated chocolate until the visible ice-cream is completely covered and place back in the freezer until time for serving.
