Hallumi with sweet chilli sauce

Ingredients

250g sheep & goat halloumi 
2 chili pieces, finely chopped 
50 ml honey 
15 ml white vinegar 
50 ml water
1 bay leaf 
1 tbsp dried coriander
Fresh coriander leaves 
2-3 tbsps. olive oil 

Method
Place pan on heat and once warm add olive oil.
Cut halloumi in thin slices and add on pan to get a nice colour on both sides.
To make the chili sauce, add water, honey, vinegar, bay leaf, dried coriander and chopped chili in a pot and boil on low heat for 5 minutes.
Serve halloumi, drizzle sauce on top and garnish with fresh coriander leaves.
