4 turkey breasts
1 tbsp mustard
1 tbsp honey
1 tsp olive oil
1 tbsp fresh tarragon
1/4 tsp ground pepper

For the glaze
Pick leaves from tarragon and discard stems.
Chop tarragon leaves and mix then in a bowl with mustard,olive oil, honey and pepper to form a paste.
Preheat the oven to 180C and place the turkey breasts on a rack in a roasting pan.
Cook to a minimum internal temperature of 77C, approximately 1 hour.
Take the pan out of the oven and brush the breasts generously with the honey mustard glaze.
Cook for an additional 5 minutes. Let stand for 10-15 minutes before slicing or serving the breasts whole.
