Fasting Salmon and Pea pasta

If you are fasting and if you enjoy fish, then this pasta recipe with salmon and peas is for you, it’s delicious and easy to make!

 

Ingredients: (4 people)

1 package pasta (any type you like)

½ kg frozen peas

1 lemon, zest and juice

1 tbsp. fresh thyme

½ tbsp. salt

3 tbsps. olive oil

1 kg salmon (fresh or frozen)

Black pepper

 

Method:

Boil the pasta in hot water for 8 minutes or according to package instructions, until al dente. During the last 3-4 minutes of cooking the pasta, add your peas.

When done, drain the pasta and peas but make sure to keep 3 tablespoons of the liquid aside.

While the pasta is cooking, prepare the salmon. If frozen, defrost by running it under cold water. Wipe with paper.

Place a nonstick skillet over medium-high heat.

Brush both sides of your salmon with 1 tablespoon of olive oil. Place the salmon fillets in the pan and cook the one side, without a lid, for about 3-4 minutes or until golden brown. Shake the pan occasionally to prevent the salmon from sticking. Flip the salmon over, close the pan with a lid and lower to medium heat.  If the salmon is frozen, cook for another 6-8 minutes.  If fresh, for a further 3-4 minutes.

Next, place your pasta, peas and the liquid that you had set aside in a large skillet. Add the lemon zest and juice, fresh thyme, salt and 2 tablespoons of olive oil. Then break the salmon into pieces (removing skin if any) and add to the pasta. Cook together (stirring gently) for about 1-2 minutes over medium heat. Add salt and pepper to taste, and serve.
