Crispy Squid Rings with Mozzarella Cheese!

This is one of those super delicious (and healthy) seafood dishes that’s simply perfect for the entire family!
 
What you will need: (2-4 servings)
 
1kg Squid rings (frozen)
 
Coarse salt
 
400 g. chopped canned tomatoes
 
1-2 tbsp. olive oil
 
Pepper
 
Basil
 
Thyme
 
180gr.-200g. mozzarella cheese
 
Method:
 
Defrost the frozen squid rings according to package instructions, then rinse well and wipe dry with paper towels.
 
Next, lay your squid rings side by side in a large pan or Pyrex dish and sprinkle with coarse salt. Into a bowl, add your chopped tomatoes, olive oil, coarse salt, pepper and herbs and mix with a spoon.  Slice your mozzarella cheese and cover each squid ring with one slice of the cheese.  Fill the center of each squid ring with your tomato mix.
 
Place your squid in a preheated oven at 200°C for about 12 – 14 minutes or until the rings take on a golden color and the melted mozzarella cheese creates a decadently crispy surface.
 
Enjoy with a pint of cold beer!
