An Irresistible French tart that will be the star attraction on your holiday table!
What we will need: (for 8 servings)
375 g. ready pastry
3 large eggs
150 ml cream
50 g. cheddar cheese
100 g. good quality ham
50 g. stilton cheese (or any other blue cheese)

Method:
Layer a baking dish (20 cm in diameter) with your pastry, making sure to cover the entire dish. Pierce the base of the pastry with a fork so as to allow it to “breath” during the baking process. Place your dish in the freezer for 1 hour.
After 1 hour has passed, remove the dish from the freezer and preheat your oven to 180°C. Line the pastry with non-stick grease-proof paper and fill the dish with ceramic cooking beans or any other heavy legume like rice. The paper lining is to ensure that none of the beans or any other legume stick to the pastry. Bake the pastry for 15 minutes without opening the oven at any point. Then remove the paper lining and bake the pastry for a further 5 minutes.
We then move on to the filling:
In a large bowl, beat the eggs and cream until properly combined. Grate your cheddar cheese and add it to the mixture, stirring it in a few times. Then slice your ham into strips and add that to the mix as well. (For extra flavor you could even add some bacon bits). Next, add your blue cheese and a sprinkling of black pepper.
For those who’d like to elevate the flavor to another level, add some fresh sage leaves, finely chopped with kitchen scissors.
Mix all the ingredients well and pour into your prebaked pastry dish.
Bake the completed quiche Lorraine at 180 ° C for 25 minutes until the surface turns golden brown.
