Chicken with Peas and Potatoes (serves 4)

You can make this dish any time of the year, and every time you do, it never fails to fill the house with the smell of tradition, which always seems to remind you of...mom! Get ready to grab a hunk of bread and sop it all up!
 
Ingredients:
 
1 whole chicken cut into 8 portions
1/3 cup olive oil
1 onion, diced
2 medium potatoes, chopped
2 carrots, chopped
1 tsp paprika powder
½ cup dry white wine
2 ripe tomatoes, peeled & diced
1 tbsp tomato paste
1 pinch sugar
300g frozen peas
1 tsp dill, finely chopped
salt & pepper
 
Directions:
Rinse the chicken pieces and dry them with a paper towel. Arrange them in a baking dish and sprinkle a good amount of salt and pepper on them. In a large shallow pot, heat up the olive oil. Brown the chicken all over, then lower the heat one notch and add the onions. Sautee them with the chicken until they become caramelized and then add the potatoes, carrots and the paprika. Stir it a bit and let it sit for 1’-2’. Carefully pour in the white wine and let sit for 1’. Next, add the tomato paste, the diced tomatoes and a pinch of sugar. On another burner, warm up some water and then add it to the food so that the food is covered up half way. Put on the lid and let it cook for 15’. Add the frozen peas and some salt and pepper to taste, then let cook for about another 25’. Lastly, add the dill. Stir and let cook for 5’-10’ more. Garnish the dish with large slices of feta…and don’t forget that aforementioned hunk of bread!
