Ingredients

500g all-purpose flour
350 ml water, warm to to 35 ° C
10g instant dry yeast
1 pinch of sugar
10g salt
2 tbsps olive oil

For the coating
2 tbps water, at room temperature
1 tsp sugar

On Green Monday, in every single kitchenhold or picnic table, there is always lagana and fresh vegetables on the menu. Therefore, we give you an easy recipe to make your own lagana.

Few words about lagana
Lagana used to be unleavened bread, that is, it was made without leaven and yeast, with only ingredients being water and flour, symbolizing thus the humility of the Christians. Nowadays, however, we use yeast or leaven to make it.

 

Method

In a bowl, add the water, yeast and sugar and mix them with a wire. Leave it for 15-20 minutes until the yeast is activated. Afterwards, pour in the flour, salt and oil and beat them using the mixer with the hook for 5-7 minutes. At first we beat at low speed and then we accelerate speed. Note, do not add the salt at the beginning, as you will burn the yeast.

 

7 minutes later, add some olive oil a bowl and some flour in your our hands. Place the dough in the bowl and cover it with a membrane. Leave it to rise until the dough doubles, for about 40 minutes.

 

Take out the dough from the bowl and with a sharp knife, cut it into two equal pieces. Apply each piece on a parchment paper. Using a rolling pin, flatten the pieces and make them big enough to fit into 2 baking pans. Place the parchment paper onto each pan and transfer the laganas there, opening them a little once on the baking pan, in order to retain their shape when baking.

 

In a bowl, mix water with sugar to make sugar water. Coat the laganas with the sugar water and sprinkle with sesame seeds.
While you wait for 20 minutes for the laganas to rise, preheat the oven to 220 C in the air mode. Afterwards, press the laganas with your fingers in order to shape the lagana. Bake for 25-30 minutes.
