A super (foods) way to get through September!

September comes with it a very busy routine.  Back to school and back to work!  To make your life easier and healthier, we bring you an easy and super tasty recipe full of nutritious superfoods!
 

Salad with quinoa, broccoli and feta

 
Quinoa, the ultimate superfood, brings lots of healthy goodness into our lives. Very satisfying and nutritionally beneficial, it is rich in protein, amino acids, vitamin B, iron and many antioxidants. Here’s how to make this simple, delicious quinoa salad.
 
Ingredients: (4 people)
 
1 cup water
 
½ cup quinoa
 
500 g. broccoli
 
150 g. feta, cut into cubes
 
Olive oil, lemon, salt
 
Method:
 
Prepare the quinoa first.   Add the water and quinoa into a saucepan and boil over medium heat (or according to package instructions). Once the water has reached boiling point, reduce heat and simmer until the quinoa is tender and has absorbed all the water, about 15-20 minutes. In a separate pot, boil the broccoli.  Once cooked, combine the broccoli, the quinoa, and feta cubes in a large bowl, and drizzle with olive oil and lemon. Season with salt (to taste). And voila, it’s 'Ready!
 

Super(food) Tip:

You can enjoy this quinoa salad as a main dish or as a side to accompany another incredibly nutritious food – the infamous salmon!  Salmon will give you protein and beneficial omega-3 fats, especially essential for growing children (and growing brains!).
