With a clean towel clean carefully all the mushrooms remove away all dirt. Avoid wash them because it makes them absorb a lot of water. Cut them in half. Depend on size you can cut them in four.
Place in a pot the vegetable oil and slowly sauté the mushrooms for 10 minutes until you get a light gold brown color. Remove the access oil from the pot and add the wine. Wait until half of the wine remain and add the salt pepper and coriander. Continue boiling until all the liquids evaporate and get a golden color. This is a traditional Cypriot dish that should exist in every table. The combination of the coriander and wine characterize the Cypriot recipes.
