Meat loaf with minced meat, hallumi and eggs

Ingredients

For the meatloaf
1 kg pork minced meat
1 cup halloumi, grated
1 cup onion, finely chopped
1 cup parsley, finely chopped
1 tsp garlic powder
1 tsp cinnamon powder
1 tsp paprika
1 tsp curry powder
½ tsp cumin
1 tbsp mild mustard
1 tbsp tomato paste 
½ cup breadcrumbs
2 eggs
1 ½ tsp salt
½ tsp black pepper
1/3 cup milk
For the filling
4 eggs, boiled
cherry tomatoes
feta cheese
flour
For the potatoes
1 kg potatoes
¼ cup olive oil
1 tsp thyme
1 tsp cumin
1 tsp curry powder
1 tsp salt
1 pinch pepper
½ cup warm water

Method

For the meatloaf
1) Add all ingredients for the minced meat in a bowl and stir well. 
2) Cut a large piece of non-stick baking paper and sprinkle the middle part with breadcrumbs. 
3) Place on top half the minced meat. 
4) Crumble in the middle of it, the feta cheese and on top of it the cherry tomatoes cut in half. 
5) Sprinkle oregano on top. Put rest of the minced meat on top and shape a meat loaf. 
6) Sprinkle all over with the rest of the breadcrumbs. 
7) Roll the meatloaf with the non-stick baking paper and turn in the shape of caramel, to seal it. If you run out of baking dish cut another piece. 
8) Place meatloaf in a baking dish.
For the potatoes
1) Peel the potatoes, wash well and cut in half if they are small or in 4 if they are bigger. 
2) Place in a large bowl and add olive oil, thyme, cumin, curry powder, salt and pepper. 
3) Stir well and then add the potatoes in the baking dish around the meatloaf. 
4) Add water carefully. Bake in preheated over at 200C for 1 hour. 
5) Take out of the oven, open the baking paper slightly and keep baking for another 20 minutes until it gets a nice golden colour. Once done, take out the baking paper and keep baking for another 20 minutes.
