Teriyaki Salmon with Asian Vegetables

Teriyaki is a Japanese cooking method, in which the ingredients are firstly marinated in teriyaki sauce and then cooked. Teriyaki is a very flavorsome light sauce! We show you how to make a nutritious salmon, marinated in teriyaki sauce and served with Asian vegetables. A very healthy dish for you and your family!

Ingredients ( 4 portions)

4 salmon filets

100 ml teriyaki sauce for marinade

50 ml water

3 tbsp olive oil

1 pack of frozen Asian vegetables

 

Method

In a large bowl, dilute the teriyaki sauce in the water and place the salmon filets inside, for at least 20 minutes; if you have time, for up to 4 hours. If the marinade does not cover completely the salmon, turn the filets over, halfway through so both sides are marinated. Place the bowl in the fridge if you are going to marinate the salmon for more than 20 minutes, and take it out 20 minutes before cooking. If the salmon filets are frozen, put them in the fridge and defrost them completely, before you marinate them.

Remove the salmon filets from the marinade, keeping the marinade on the side. In a pan, warm up a tablespoon of olive and place the salmon filets. Cook from one side, for 5-7 minutes until golden, then turn them over to cook the other side as well for another 3-4 minutes this time. If there’s skin on the filet, start cooking from that side.

In the meantime, until the salmon filets are cooked, cook the vegetables in a wok or in a deep pan. Warm 2 tablespoons of olive oil in the wok and add the frozen Asian vegetables. Do not defrost them. Cook for 6-7 minutes or until the vegetables are soft, stirring occasionally. Add the teriyaki sauce marinade and let it simmer for approximately 5 minutes.

Server the salmon filets over the vegetables. Your delicious and light lunch is ready to enjoy! If you wish, you can accompany with rice or noodles.
