If you’re after a lunch that’s protein rich, packed with antioxidants and is the perfect vegetarian or fasting alternative, then this is meal you want to be cooking! It’s so easy!
What you will need (for 1 serving):
250g beans
1 onion
½ - 1 chilli pepper
1/3 cup parsley
For the sauce:
1 clove garlic
1 tablespoon olive oil
½ - 1 teaspoon lemon juice
1-2 teaspoons mustard
Salt
Pepper
To serve
Village bread
Method:
From the night before, soak the beans in plenty of water for at least 8-12 hours.
Drain the beans. In a pot, pour plenty of fresh water, add some salt and when it comes to the boil, add the beans. Let them cook until tender and then drain. Let cool.
Dice (or slice) the onion and chilli pepper and throw into a large bowl together with the parsley. You can use half of or the whole chilli pepper depending on how spicy you’d like your dish to be.
Next, add the beans and mix all the ingredients thoroughly.
For the sauce, use a small dish to mix your garlic (diced or crushed), olive oil, the juice of the lemon, mustard, salt and pepper (to taste).
Add the sauce to the beans and stir until everything has been combined.
Serve the dish with fresh toasted village bread. Drizzle with olive oil and oregano to make it even tastier!
