Salad Nicoise - with a sardine twist!

Our version of Salad Nicoise is not only yummy – it’s also really healthy – and has a Cyprus twist that is sure to satisfy your sardine craving!
 
This is what you’ll need:  
 
1 tin of sardines packed in olive oil
 
2 potatoes
 
1-2 fresh tomatoes
 
1 onion
 
2 eggs
 
200g. baked beans in tomato sauce
 
150g. sweetcorn
 
2tbs olive oil
 
Salt and Pepper
 
Method:
 
Boil your eggs in a pot or saucepan for approximately 10'-12 minutes.  Once cooked, peel them under cold running water and cut into slices. 
 
Next, peel, wash and dry your potatoes. Cut them into cubes and boil in salted water for 30 minutes. Then drain and set aside until they have cooled. Carefully peel the onion and cut into thin slices. Rinse your tomatoes and slice them as thick or as thin as you desire.  
 
In a salad bowl (or individual bowls), add your sardines, tomatoes, onion, potatoes and eggs. To that, throw in your sweetcorn (drained of any liquid) and baked beans in tomato sauce.  Add some salt and pepper and a little extra olive oil and lightly mix your ingredients.  Enjoy!
 
Tip:  For that little something extra, you could add some capers and a few lettuce leaves to your salad! Or, you could even use your lettuce leaves like little cups to hold all your the salad ingredients.
