Oat Biscuits with Stevia – not Sugar!

Life can still be delightfully delicious even when having to make healthy changes to your diet!
 
November 14 is World Diabetes Day whereby global awareness is raised regarding this chronic disease, and with uber amounts of information and support given to those wanting to learn more about the illness.
 
In celebration of the day, we thought to bring you this very simple oat biscuit recipe that will satisfy even the most ‘sugary’ of cravings in the healthiest of ways!
 
What you will need: (±17 pieces)
 
200g. self-raising flour
 
100g. oat flakes
 
2 tbsp. crushed walnuts
 
2 tsp stevia
 
170g. margarine or butter
 
½ tsp cinnamon
 
½ tsp vanilla powder
 
Method:
 
We begin by sifting our flour into a bowl and then mix in our oats and grated walnuts.  To this, add your stevia, cinnamon, vanilla powder, margarine or butter and mix until all the ingredients are well combined and take on a dough consistency.  
 
Transfer the dough to a lightly floured counter and roll it out with either a rolling pin or glass bottle.  Then, cut into any shape you want using a cookie cutter.  
 
Place them (evenly spaced) on a baking sheet lined with a silicone baking mat or any other non-stick paper and bake in a preheated oven at 180°C - 200°C for about 20-25 minutes, until the biscuits take on a gorgeous golden colour and your kitchen is filled with the decadent aroma of freshly baked goodness.
 
Remove from oven and let cool!
